You ever wonder what it means when a recipe calls for zest?
To me it sounds like some kinda romantic appeal <3
Actually it is the colorful outer part of the skin, not the inner
white part, which is known as the pith. The zest contains all of the
aromatic citrus oils and provides a hint of citrus tang to the recipe.
To get a bit of the zest for your recipe swipe it one time on a cheese
grater and you'll have all you need.
I learned more about `zest` from Kit Singleton of `My Country Cooking`
